One of my favourite cakes is Yorkshire Parkin. It is a soft cake traditionally made of oatmeal and black treacle. It is thought to have originated in Yorkshire and is traditionally eaten on Bonfire Night (November the 5th), but it is also eaten throughout the year.
The ingredients are flour, oatmeal, black treacle, butter, brandy and ginger. It can be kept for a week or two in a sealed box. Most people prefer to eat it slightly aged.
